Lemon Potatoes

If you like potatoes and if you like lemonade, you'll like this recipe.

6 medium potatoes cut in quarters
Juice from 2 lemons
1/2 cup extra virgin olive oil
1 Tbs oregano
Salt and pepper to taste
1 cup water
3 cloves Garlic, minced (optional)
Parsley (optional)

In a 9x12" baking pan arrange the cut potatoes.

Add lemon juice. Salt and pepper generously. Rub in the oregano and olive oil, mix well. Add in the water.

Bake at 375F until potatoes are just golden, approximately one hour. Serves 4.

(Hint* Mix everything except potatoes in a large Zip-lock bag.
Let sit in the refridgerator for 1 hour.)
